My favorite (hard) boiled egg recipe is all about the steam

I am a huge fan of Chef John and his Food Wished channel on YouTube. I am also a fan of not messing up the simplest of recipes: making a hard-boiled egg. An egg that’s creamy and a little yolky and easy to prepare, to peel, and not overcook. Chef John from Food Wishes is on my YouTube channel rotation and he has a simple, foolproof, recipe for making the perfectly-cooked eggs:

Soft Hard Boiled Streamed Eggs
Serves 6
Deliciously creamy and yolky eggs without spending a lot of time using steam instead of boiling. Really easy to peel as well.

Ingredients
  1. 3 quart saucepan with lid
  2. 1 1/4 cup water
  3. 6 large eggs, straight from the refrigerator
Instructions
  1. Fill your pot pinky nail deep with water
  2. Bring it to a boil over high heat (takes a couple minutes not between ten and twenty)
  3. Lay the eggs carefully in the bottom of the saucepan
  4. Cover the pot
  5. Bringing the heat down to medium-high
  6. Put the timer on for between 9 and 9 1/2 minutes
  7. Rinse the eggs under a running tap to cool them off and stop the cooking process

Fill your pot pinky nail deep with water, bring it to a boil over high heat (takes a couple minutes not between ten and twenty), lay the eggs carefully in the bottom of the saucepan, cover the pot, bringing the heat down to medium-high, and then put the timer on for between 9 and 9 1/2 minutes. Then, the moment it’s done, rinse the eggs under a running tap to cool them off and stop the cooking process. 

I tried putting the raw eggs into a pot full of tap water, bring the whole thing up to a boil, then turning off the flame and letting it sit for ten minutes. It works every time—if and when I don’t forget that pot’s on the range. I’ve had catastrophic boil downs that have resulted in a dozen golf balls burning at the bottom of my pot.

    My favorite hard-boiled egg recipe uses the InstantPot. Set it and forget it! You can add more or less time depending on how soft you want the yolks, and the shells slip right off, every single time. I am a convert.
